Pumpkin Cupcakes with Butter Cream Cheese Frosting
Tis’ the season for pumpkin everything; pumpkin coffee, pumpkin bagels, pumpkin donuts and, my personal favorite, pumpkin cupcakes! Saturday afternoon I found myself in the mood for something sweet, and also for something pumpkin flavored. I found this great recipe on Pinterest for Pumpkin Cupcakes with Butter Cream Cheese Frosting and decided to give baking these delightful little cupcakes a shot.
I followed the entire recipe for the pumpkin cupcakes, and used this simple recipe for the butter cream cheese frosting. Instead of using sugared pecans, I opted for a touch of sparkle with a hint of sweet with these pretty gold sprinkles I found at the local grocery store.
Butter Cream Frosting
To apply the butter cream frosting, I purchased inexpensive plastic frosting decorator tips from the grocery store. I chose which decorator I wanted to use based on the look I wanted to achieve and placed the desired tip in the corner of a plastic bag. I filled the bag with the frosting and was able to easily decorate the cupcakes with this frosting application.
The decorator tips were easy to use and helped me create a picture perfect cupcake (sidebar: the frosting on my cupcakes almost never turn out this pretty! Another reason why I’m so proud of them!). I’ll be adding these pumpkin cupcakes to my (short) list of Pinterest successes as well as to our Thanksgiving Day dessert menu.
